NAGAON, India, March 4 (Xinhua) -- Jaggery is commonly made from sugarcane, with extraction, clarification, and concentration. In India's northeastern state of Assam, farmers are using traditional methods to extract sugarcane juice in the fields.

The process includes crushing sugarcane to produce juice, partially purifying the liquid, melting and filtering to remove impurities, crystallizing sugar from syrup, and finally drying sugar crystals further making them edible.
